Eat a Rainbow A Day (+ a Challenge!)

The variety of fruits and vegetables that you eat is just as important as the quantity. As nutritious as they are, none of us can thrive long-term on 9 servings of apples per day! or 9 servings of spinach, or 9 servings of any one fruit or vegetable.

Today's episode talks about the importance of eating a rainbow every day, at least one serving from each of the 5 color groups and some of the nutritional benefits of each group.

While some of the common nutrients among the 5 groups overlap, there are unique benefits of each.

There's also a Rainbow a Day challenge this week, starting tomorrow through this Saturday(December 1, 2012). If you're in, simply post a comment below that lists what you've eaten for the day to include all 5 colors.

The challenge lasts for 5 days, but you only need to post 1 day's worth of meals.
